Executive Chef – Frederic Robert

General Manager – Jeff Strauss
Chanson International Executive Frédéric Robert brings over 20 years of culinary experience to Chanson Le Salon, most recently working as Executive Chef at the Baccarat Hotel and the Chef de Cuisine and Executive Pastry Chef at Clement at The Peninsula New York. Chef Robert is a decorated pastry chef with 5 stars Forbes, 5 diamond, James Beard, and Michelin awards under his belt.
Inspired by French brasseries and American diners of the past, Le Salon offers fine dining that is approachable yet elevated. Chef Robert hopes to provide a destination where guests can enjoy exceptional cuisine and beverages in a welcoming space with a sophisticated, living room feel. Focusing on excellent-quality dishes and seasonality, the restaurant sources fresh ingredients from top purveyors, such as salmon from Prince Edward Island, vegetables from the Union Square GreenMarket, duck from Crescent Farm on Long Island, and more.
Beverage Director of Chanson International and Thyme Bar, Jeremy Le Blanche, a French native with global bartending experience, leads the Beverage Team, providing bespoke libations and craft cocktails after dark.
Exploring the new horizon on mixology creation with a minimalist approach, the cocktail program at Chanson Le Salon underscores elevated classic cocktails served in delicate glassware with edible garnishes.
The Draft Cocktail program at Chanson Le Salon includes Sparks (Salted Caramel Rum with Champagne Soda) and Pellucid Draft (Gin, Aloe Vera, Elderflower, and Nori). Most notably, guests can enjoy Old Fashioned (Mellow) and Negroni cocktails (#FF0000, named after the digital Hex Color Code red, a Negroni with Patchouli) from custom-labeled wine bottles. As a nod to the French appreciation for wine, but with a twist, these signature cocktails are poured from their wine bottles table-side for guests to enjoy. Finally, we offer made-in-house Chocolate Wine for a liquid dessert to close his menu.
